portugal. my home. the one that it was my home and once again is my home. the home that saw me growing up. which gave me the opportunity to do so much. that allowed me to go. that allowed me to come back. and that one day might allow me to go again. because I do not know for how long it will be my home. but it is for now. and now I'm already settled. I already have a home. a home of four walls. and so many others in between. white colour. some plants. and many food props. food props that I brought from my other home. which was not portugal. which I left behind. that it took me for three and a half years. who well received me. where there was good times. where there was bad times. and which I miss, a lot! especially the people. people who I will not see everyday. or perhaps every year. and some of which I could not even say a goodbye. but also the house. or home. that was 'mine' in those moments. that allowed me to create so many of those good times. all those good memories. memories that are documented here on the blog. blog that I created in that other place. that other place that I called home. my home away from portugal. and it was hard to leave. really hard. why? because when I left portugal, it was a see you later. it would be (and will always be) a see you later. but in this case it seems, to me, a goodbye. and a goodbye is always painful.

to all the people I met, to all the memories created, to all the ties I share with those people.

Make ananás com hortelã // pineapple and mint

june. it's hard to explain, it's a month of typical portuguese things. last month of spring. first of september. from all the seasons crossing, this is the prettiest one. from spring, to summer. the biggest days of the year. my birthday. and all the memories. memories of, last days of school. of popular festivities. the plans for the big st. john's night out. the first trips to the swimming pool. the first 'al fresco' nights. the first ice cream. the cluster of people on the street. of waiting half hour to eat 'bifanas'. or 'farturas'. the smell of grilled sardines. of promises to an unforgettable summer. or the smell of 'manjerico'. that every year at our home, everyone promised to take care of it to last until the next season. june, my favourite month.

pineapple and mint
serve 4

idea taken from the book 'da horta para a mesa' from the portuguese cookbook author Cláudiia S. Villax, which makes it with strawberries and mint and it's delicious.
to know how to slice a pineapple, watch this video.

ingredients:

1 medium pineapple (1,300 kg)
10 mint leaves, finely chopped
2 tsp. honey (optional)

Start by cutting it in half vertically, without taking the leafs off. Then slice the halves in half, which will leaves with 4 equal pieces of pineapple (for 'boats'). Then, cut the hard core of the pineapple (which is usually the hole of the pineapple slice) and then with a sharp knife cut the fruit by running the knife between the fruit and skin. Finally cut the pineapple into small triangles.
Place the pineapple 'boats' in a bowl, scatter the mint leaves on top and some honey (to cut some acidity).
Leave it to cool in the refrigerator for 1 hour or until you are ready to serve it.

Make hambúrguer de ananás // pineapple burguer

the inspiration for this recipes comes from the holidays in Portugal. while in the algarve I went with my mom to a new burger place that opened to the public that same week. the decor was interesting. simple. menu was written on a chalk board on the wall. suggestive ice-cream flavours. and an inviting terrace.

we ended up there on the very next evening. I ordered a pineapple burger. a homemade iced tea. a goiaba ice-cream for dessert. the idea of recreating this recipe at home stayed on my mind! this was not the only burger place that I have been in Portugal. apparently is in vogue! and I quite like it!
