Make Chocolate Cardamom Cake w/ Berries

Chocolate and Cardamom Cake w/ Berries | https://oandrajos.blogspot.com
Eu amo bolo. E no topo? Muitos frutos do bosque frescos.

I love cake. Not a big fan of chocolate. But sure a big fan of cake. Love cakes with several layers. Some cream in between. And on top? Loads of fresh berries. That's my kind of cake. That's why I love spring cakes. It's warm enough to eat cakes with a fresh vibe to it but not to warm that I will regret to cook it.
So this one was for Tiago's birthday. He was asking for a chocolate cakes for ages. Maybe since the cake I made him last year. Since I am not a big fan of chocolate I added some... cardamom! Yeah that's right. That one spice that I love and that makes chocolate irresistible to me! In the end, chocolate, cardamom and fresh berries is one of the best combos ever!!

250 g queijo mascarpone
250 g iogurte grego natural
1 c. chá açúcar em pó
400 g frutos do bosque -  framboesas, mirtilos e morangos.

Enjoy!

Rhubarb Rose Petals Cake | https://oandrajos.blogspot.com
É tempo de bolo. Bolo de ruibarbo. Ou talvez scones. Mas ruibarbo pareceu-me melhor.

It's time for cake. Rhubarb cake. Or maybe some scones. But I was feeling rhubarb. Is that kinda of weather. Cold winter and pinkish (forced) rhubarb. A few slices of rhubarb and rose petals cake will do just fine. A crusty top will make it even better. The rhubarb compote on the side is just to bring out all the rhubarb flavours. Those flavours that match winter and are a reminder of spring. While forced rhubarb lasts I will make sure I bake this cake. Because this vibrant pink rhubarb matches the grey winter days.

ingredientes:

100 g manteiga s/ sal, temperatura ambiente
200 g açúcar
2 ovos
180 g farinha s/ fermento

Enjoy!

Rhubarb Rose Petals Cake
serves 10

This recipe is inspired and a mix of two recipes from two of my favourite bloggers. The first one is Linda Lomelino from the blog Call Me Cupcake (recipe), that has this amazing and easy rhubarb cake. The other one is Aran Goyoaga from Cannelle et Vanille (recipe) that mix the rhubarb and rose petals in a beautiful way.
A few tips. First, the rhubarb stalks should be thin (1 cm wide) so they will stay on top. Second, cut them into 6 cm pieces so they will fit the cake tin. Third, on the side serve with some rhubarb compote - you can find the recipe here.
That being said, check the recipe.

ingredients:

100 g unsalted butter, room temperature
200 g sugar
2 eggs
180 g plain flour
1 + 1/2 tsp. baking powder
200 g rhubarb, 6 cm pieces
2 tbsp. demerara sugar
2 tsp. dried rose petals

Preheat the oven to 180ºC and grease a 20cm cake tin with butter and flour.
In a bowl beat the butter and sugar until creamy - about 5 minutes. Then add the eggs to the mixture and beat for another 10 minutes.
Then add the flour and baking powder into the mixture and fold in carefully.
Pour the batter into the greased cake tin and place the rhubarb on top, just pressing slightly to hold the rhubarb. Sprinkle the rose petals and demerara sugar on top.
Bake in a preheated oven for 45 minutes - until golden and a cake tester comes out clean.

Serve with greek yoghurt and rhubarb compote.

Enjoy!

Make Blood Orange Curd Roll

Blood Orange Curd Roll | https://oandrajos.blogspot.com

Beautiful winter days. Those of grey skies and cold and dry weather. Love enjoying the light coming through the window. Not just at home but at the cafés too. I always make sure I can sit at the window to absorve all of it. Quite special. That and the fruits that one can enjoy this season. Citrus fruits, being oranges and clementines, or the lemons and tangerines that my haunts gives me from her garden. The tangerines were so sweet that I just them ate them all. They did not make into a recipe. But also blood oranges and rhubarb. I have been eating blood oranges for a month now and I can't quit. Blood orange curd on everything. And also on this Swiss Roll. Perfect for winter days by the window.

300 g iogurte grego
metade do curd de blood orange
blood orange, raspa e rodelas

Enjoy!

Blood Orange Curd Swill Roll
serves 8

I have been using a recipe for a Swill Roll for a long time, that I love and always comes out perfect, but this time I decided to give it a go and try Jamie Oliver's recipe for a roll, or as he calls it a Artic Roll, that I found on his Christmas Cookbook. I decided to give it a go because is so simple, 3 ingredients only and it's also perfect, so from now on this will be my Swiss Roll Recipe.
First make the blood orange curd, could be made 24 hours in advance to allow it to cool down and then the Swiss Roll.
That being said, check the recipe.

ingredients (blood orange curd):

3 blood oranges
70 g unsalted butter, room temperature
300 g sugar
3 large eggs, lightly beaten

Squeeze the juice of the 3 blood oranges to a saucepan, add the butter, sugar and eggs. Bring to low heat and keep stirring very carefully, until the mixture is thick - around 10 minutes. At the end, before pouring into a jar, strain if necessary. Makes 1 Jar!

ingredients (sponge):

3 large eggs
100 g sugar
75 g plain flour

Preheat the oven to 180ºC and line a baking tray (25cm x 30cm) with baking paper.
In a bowl beat the eggs and sugar until pale and creamy - about 8 to 10 minutes, essential to make it fluffy. Sift in half the flour, very gently fold in the flour and the repeat again to the rest of the flour. Pour the mixture into the lined baking tray and spread out evenly. Place in the oven and bake for 10 minutes (not more nor less, this time will be perfect!).
Then while it's in the oven, spread some sugar over a large sheet of baking paper. When the sponge is ready, remove from the oven, turn it out on to the baking paper. Peel off the baking paper from the top and cover the sponge with a clean damp tea towel. Leave it like this for half an hour to cool down (Nigel Slater tip! that actually works!).

to assemble the swill roll:

300 g greek yoghurt
half of the blood orange curd
blood orange, slices and zest
icing sugar

To assemble, cover with a layer of greek yoghurt and then some blood orange curd. Carefully roll it from the narrowest side and then sprinkle with some icing sugar, blood orange zest and some blood orange slices.

Enjoy!

Embora estes tenham sido feitos numa dessas tardes solarengas e quentes.

Clear, crisp and cold winter days. When the sun is shining. When the mid-afternoon sun is just enough to make you sit outdoors, drink some coffee and enjoy the warmth with the ones you care about. Those have been the days in Portugal so far. Opposite to today where is pouring rain. The kind of Portuguese winter days that I am used to. Rainy days. It rains so much in winter that just makes you wanna stay inside and bake scones. Although these ones where baked after those warm and sunny afternoons. Coming home to knead some flour is such a good thing. I can barely explain but something I do really enjoy. I have been thinking about scones for quite a while. Now was the perfect occasion to share some at home with some orange curd. Because this winter I have had so much citrus fruit that I have been eating them as much as I can. So scones it was. A perfect excuse to match scones with citrus fruit. Even better next morning for breakfast. No fuss just enjoyable.

A primeira receita do ano. Neste caso, canela e avelãs fazem as honras. Sempre fazem.

The first recipe of the year. In this case, cinnamon and hazelnuts will do it for me. It always does. A combination of two of my favourite flavours. In a recipe that is perfect for winter. Mixing the ingredients and waiting for the dough to rise. Mine not be everyone's cup of tea but sure is mine. And also my kinda of sunday breakfast when brunch is not an option.

Babka de Canela e Avelã
faz 2 babkas

Então começando numa ponta, começar a enrolar e deixar ficar bem apertado. Cortar então longitudinalmente, deixando apenas 1 cm ligado no topo.

Enjoy!

Cinnamon Hazelnut Babka
makes 2

A recipe taken out of Jarry Magazine issue 2. A quite interesting magazine and a recipe that's even better, as not only tells you how to recreate the recipe at home but also let's you know the story of this Eastern European Jewish sweet bread (Babka). On top of that also gives you plenty of amazing filling suggestions like Chocolate-Passion Fruit or Churro, but I prefer cinnamon and hazelnut

ingredients (dough):

235 ml milk, slightly warm
1 sachet active dry yeast (7 g)
100 g sugar + 1 tsp sugar
3 eggs
600 g flour
1 tsp. salt
113 g unsalted butter, room temperature and cubed

ingredients (cinnamon-hazelnut filling)

150 g unsalted butter, room temperature
300 g sugar
6 tsp. grounded cinnamon
200 g hazelnuts, grossly chopped

Start by combining the milk, dry east and 1 tsp. sugar in a large mixing bow. Let stand until the yeast begins to foam, about 10 minutes. Add the remaining sugar and 3 eggs and mix well until the mixture is consistent. Slowly stir in the flour and salt until a tacky dough forms. Add the butter, a little at a time, and knead for about 5 minutes until smooth (but still tacky). Involve in flour and place in a greased bowl, cover with a kitchen town and allow it to rise in a warm place until doubled in size, for about 1 hour.
Then prepare the filling, mixing the butter in a bowl with sugar and cinnamon and setting aside.
After one hour, divide the dough into two balls.
On a lightly floured surface, roll 1 ball into a 30 cm x 30 cm square (about 0,5 cm thick). Spread the entire surface with half of the cinnamon mixture and scatter 100 g of hazelnuts over the top.
Then starting on one of the sides, roll the dough up into a tight log. Slice the dough in half lengthwise, but leaving 1 cm of dough connected on the top. Twist the two strands together and seal the cut ends by pinching them together. Carefully place in a loaf pan (23 cm x 13 cm) lined with baking paper. [Repeat the process for the other dough - to make a second babka].
Cover with a kitchen towel and leave in a warm place for about 1 hour.
After the 1 hour, brush the dough with a slightly beaten egg and place in a preheated oven at 175 º C for 40-45 minutes until golden brown.

Serve simple or topped with greek yoghurt, honey and pumpkin seeds.

Enjoy!
