Chocolate and Cardamom Cake w/ Berries | https://oandrajos.blogspot.com
Eu amo bolo. E no topo? Muitos frutos do bosque frescos.

I love cake. Not a big fan of chocolate. But sure a big fan of cake. Love cakes with several layers. Some cream in between. And on top? Loads of fresh berries. That's my kind of cake. That's why I love spring cakes. It's warm enough to eat cakes with a fresh vibe to it but not to warm that I will regret to cook it.
So this one was for Tiago's birthday. He was asking for a chocolate cakes for ages. Maybe since the cake I made him last year. Since I am not a big fan of chocolate I added some... cardamom! Yeah that's right. That one spice that I love and that makes chocolate irresistible to me! In the end, chocolate, cardamom and fresh berries is one of the best combos ever!!

Strawberry Sponge Birthday Cake

I say delicious, as everybody really enjoyed it. there was nothing left to tell the story. but there wasn't anything else left to say. because a birthday party is between friends and family. and even when you are far away, you try and be closer. and this year, we were all really close.

Bolo 'Sponge' de Morango
faz 1 bolo

250 g queijo mascarpone
250 g iogurte grego natural

Enjoy!

makes 1 cake

A recipe for a strawberry sponge cake, a delicious cake, promise! It's quite simple to make. Only takes a few minutes to mix the initial ingredients, after that, it's of an incredible simplicity, without any tricks or and exotic ingredients.
The recipe shown here, it's to make one cake layer, after that you'll have to repeat to make a second one.
I even used mascarpone cheese and greek yoghurt to (try) and make it healthier.
I have been using loads of strawberries in my recipes, just like in this toast, as on the smoothie bowl, on the carob pancakes, or in the blog in general, but it's not my fault, it's just an addiction.

ingredients (for the cake):

110 g butter, at room temperature
110 g sugar
2 eggs
110 g sifted flour
1 tsp. baking powder

Start by mixing on a bowl the butter with sugar and beat for at least 15 minutes until the mixture is creamy. Then add the eggs one at a time while continuing to beat. Now fold the previously sifted flour and the baking powder.
Pour the mixture over a round, simple, 20 cm cake tin.
Bake in a pre-heated over for 20 minutes (maxium 25 minutes), at 170º C, until golden on top and completely cooked.
Repeat the process for the second layer.
Allow it to cool completely before assembling the cake.

ingredients (for the topping):

250 g mascarpone cheese
250 g natural greek yoghurt
1 tsp. powdered sugar
600 g strawberries

Mix the mascarpone cheese, greek yoghurt and powdered sugar in a bowl and beat it until well involved and creamy, for about 2 minutes.

assembling the cake:

The cake layers must be around 2 cm tall. They don't need to be perfect, but relatively uniform.
Place the first cake layer on a cake stand, spread half of the mascarpone and yoghurt mixture in an uniform and flat way and place some strawberries halves to cover the surface. Place the second cake layer on top and spread the rest of the mixture and on top add the remaining strawberries.
Place in the fridge until serving time.

Enjoy!

Make chocolate quente de cardamomo // cardamom hot cocoa

the last recipe to publish before Christmas. the last recipe for the sweet tooth people. because on this side we are not healthy this time of the year. from 'rabanadas', to 'aletria' to hot cocoa. it's all about making the holidays more festive. sweeter. with friends and family around. will be a Christmas in Portugal, once again. after a few years. it's will be different. but I kinda miss the bygone times. have a Merry Christmas and be merry to all of you on that side <3

Feliz Natal!

cardamom hot cocoa
serves 4

To make this hot cocoa I do use a Spanish hot cocoa brand, named Caoflor. It's the one used to make the famous 'Chocolate a la Taza' that they eat with a spoon everywhere in Spain and the one served with churros. It's already prepared to be thick, so you don't need to use any extra flour or other thick ingredients. Oh and it's gluten-free.
I add cardamom to make it to my taste as I'm not a big fan of chocolate. Although if you do love chocolate, you can skip it!

ingredients:

150 g ground chocolate
6 cardamom pods
800 ml milk
200 ml whipped cream

In a mortar, ground the cardamom seeds. Add the chocolate, cardamom and milk to medium saucepan and heat over medium heat for about 10 minutes until thick.
Meanwhile whip the cream until firm.
When the hot chocolate is ready, pour to a cup and wait a few minutes before serving with whipped cream on top.
Serve with some peppermint sticks.

Feliz Natal!

Make Aletria de Ovos

there is no Christmas without 'aletria'. there is no Christmas table without 'aletria'. or to me, there is no Christmas table without 'aletria'. without 'aletria' made with eggs by my mom. because this was my favourite Christmas treat when I was a kid. when 'bolo rei' or 'rabanadas' weren't for me. 'aletria' and only 'aletria'. I also liked the other versions. considered poorer. I also like the other ones that were at my grandmother's house. but I preferred my mom's one. because she added more egg yolks to be yellowish, just how I like it. and until today is the treat that reminds me more of Christmas at my grandmother's house. when we were so many that we didn't fit at the table. that reminds me of all those moments. and makes me wanna go back to the table on Christmas eve.

aletria de ovos
faz 1

ingredientes:

110 g aletria
água a ferver (q.b.)

makes 1

it's a typical portuguese christmas dessert, make with capellini pasta or sometimes called 'angel hair pasta' because it's really thin. this is a sweet version of this 'pasta dish'.

ingredients:

110 g 'aletria'
boiling water
130 g sugar
100 ml water
8 egg yolks
cinnamon stick
slice of lemon zest

Start by placing the 'aletria' in a bowl and break into small pieces. Add the boiled water and leave it to simmer for 1 minute, 1 minute and a half, then drain and set aside. Meanwhile in a saucepan add 130 g of sugar and 100 ml of water (which should be just enough to cover the sugar), place over medium/low heat for about 2 minutes, to boil but not to caramelize. Then add the 'aletria' to this mixture. Place it again over low heat, keep stirring for about 2/3 minutes until well involved.
Remove the pan from the heat and slowly start pouring the mixture into the egg yolks (which should be in a bowl, slightly beat and involved with a spoon), little at a time while stirring constantly to not 'chop'. After all involved pour it again to the saucepan and place again the saucepan over low heat for just a few more minutes. Add the cinnamon stick and the slice of lemon zest and keep stirring until you can see the bottom of the pan.
Place in a flat bowl or serving dish and let it cool down before sprinkling it with ground cinnamon.
