Make Raspberry and Cardamom Porridge Bowl

The weather has been great and I feel like I need holidays although is not happening any time soon. Good weather, holidays and a raw porridge is a match made in heaven. It's fresh and refreshing. Waking up in the morning to a (almost) ready to eat breakfast that allows you to stay in bed longer (only like 5/10 minutes more)? Yes, count me in! So while I am not on holidays, I have been eating this porridge bowl for breakfast pretty much every single day. Try it and I bet you will too!

Tempo quente. Vegetais frescos. A melhor combinação.

Warm weather. Fresh vegetables. The best combination. There is no better way to enjoy these sunny spring days than a couscous salad. One of my favourite ways to eat something delicious without cooking something hot as I despise cooking hot food when the weather is this great. It's always been like this and will probably never change. Gaspacho and watermelon are my to go foods. Simple and delicious to enjoy in a picnic in the park. While I cannot throw a proper picnic on a weekday and I can still enjoy having a nice lunch in the park or by the beach. Perks of working close to both I must say!

Salada de Couscous com Morango e Abacate
para 2

ingredientes (molho de morango):

200 g morangos, cortados em pequenos pedaços
1 chalota, finamente picada
8 folhas de hortelã, finamente picadas
8 folhas de manjericão, finamente picadas
1 c. chá de mel
1 lima, sumo e casca
pimenta preta acabada de moer

ingredientes para a salada:

130 g couscous
1 abacate, cortado às fatias
50 g tomates cereja
50 g pepino, cortado cubos
3 rabanetes, cortado rodelas finas
4 cebolinhas, finamente picado
50 g agriões
50 g queijo feta

Enjoy!

Strawberry Salsa and Avocado Couscous Salad
serves 2

ingredients (strawberry salsa):

200 g strawberries, rinsed and chopped into small slices
1 shallot, finely minced
8 mint leaves, finely chopped
8 basil leaves, finely chopped
1 teaspoon honey
1 lime, zest and juice
freshly ground black pepper

ingredients for the salad:

130 g couscous
1 avocado, sliced
50 g cherry tomatoes
50 g cucumber, sliced into cubes
3 radishes, thin slices
4 spring onions, finely chopped
50 g watercress
50 g feta cheese
toasted seeds (1 tbsp. of hemp, pumpkin and sunflower seeds)
mint leaves
basil leaves

First prepare the strawberry salsa, mixing all the ingredients in a bowl and let it chill for 30 minutes, to intensify the flavour.
The second step it to prepare the couscous according to directions in the package. In my case, in a bowl, add a portion of couscous (70 g), add an equal portion of boiling water and a pinch of salt. Let it stand for 3 minutes and then stir with a fork until a loose mixture. Set aside.
Then just prepare the salad serving the couscous with the strawberry sauce, avocado, cherry tomatoes, cucumber, radish, spring onions and watercress. Spread over the salad the crumbled feta cheese, toasted seeds and basil and mint leaves.
Serve with yoghurt sauce, poppy seeds, red wine vinegar and olive oil.

Cookies.

Cookies. All about cookies. Healthy cookies, apparently. Since I had too many pancakes in February and I'm already thinking of that Summer body, which I'll never have, healthy cookies it is. They are actually pretty delicious. Well if your idea of a delicious cookie is an oreo peanut butter flavour (well well, mine is!) you might want to skip this recipe. There is no peanut butter here (I wish!). But that doesn't stop them from being awesome cookies. Since I'm on a fainting diet, orange and cardamon oat cookies it is. I made them twice already because I really like them and pretty good for those sweet tooth craving attacks. Not that I have many to be honest. I'm more french fries.

Receita de Bolachas de Aveia, Laranja e Cardamomo
faz 16

Enjoy!

Orange and Cardamom Oat Cookies Recipe
makes 16

This recipe is from the new book of Deliciously Ella (seems like that's her name but no it's not!), Deliciously Ella with Friends. I really like the book and this recipe too. She says it's not to sweet but 'moreish little oaty bites' and that's quite true. Good for someone like me that wants to eat less sugar but still craves something sweet from time to time.
This recipe was enough to make 16 (at least for me) of around 30-35 g per cookie.
I changed a few things to the original recipe: used porridge oats, instead of jumbo oats so didn't have to grind the oats in a food processor; substituted the lemon zest for more orange zest; and finally, added some rosemary, because for me orange and rosemary is a combination made in heaven (here is the proof!).

ingredients:

300 g (porridge) oats
4 cardamom pods
6 tbsp. honey
zest of 2 oranges
juice of 1 orange
handful of fresh rosemary leaves, finely chopped
2 tbsp. chia seeds
3 tbsp. coconut oil, melted
2 tsp. ground cinnamon
6 tbsp. milk
40 g raisins

Preheat the oven to 200º C and line a baking tray (or 2) with baking paper.
Start by grind the seeds of the cardamom pods by using a pestle and mortar and then mix all the ingredients in a large bowl. Stir the mixture well until a sticky mix forms (not runny!).
Then scoop 1 tablespoon (or a bit more!) of the mixture into your hand and roll into a ball. Place the cookie on the layered baking tray and flatten it down. Repeat to make the other cookies and until there is no dough left.
Place the baking tray and bake for 20-25 minutes.
Then remove from the oven and allow them to cool down in the baking tray to firm up.
Store in a airtight container and shall last for 1 week.

Enjoy!

The perfect sunday brunch. Or saturday brunch. Or any day of the week for that matter. Can be tuesday. Can be Pancake Day. This tuesday coming. I love pancakes and this recipe is no exception. Make it good for Sunday brunch and it's a winner. Make it healthy(-ish) and it's a dream come true. It has avocado and carrots. And seeds and walnuts. And all things good. But better than that is the fact that is quite easy to make. A few ingredients put together and voilà. Love the simplicity of these things. As I love Sunday brunch.

Enjoy!

Vegan Chickpea Flour Pancakes Recipe
serves 2

Do not be scared by the ingredients for this Vegan Pancakes Recipe, it's just that I give you all the ingredients to make the complete recipe. The main ingredients for the pancake batter you probably already have in your home, the only thing you will need is the chickpea flour. It can be a bit pricey, but you can have a look at Dolly and Oatmeal blog and you'll find the recipe for a chickpea flour, but I couldn't be bothered so this one is store bought and quite good (and organic!).
It's also called Gram Flour or Garbanzo Bean Flour.
Chickpea flour is good to make vegan pancakes, savoury specifically as when water is added it's consistency is just like a regular pancake recipe. So it's quite easy to make and no need for eggs.
That said, recipe is here.

ingredients (pancake batter):

200 g chickpea flour
2 tsp. baking powder
1 tsp. fennel seeds
1/2 tsp. salt
1 tbsp. olive oil
pinch black pepper, freshly grounded
200 ml water + 2 tbsp. water

ingredients (to serve):

1 avocado
2 carrots, sliced (medium)
wild rocket leaves
basil leaves
a handful walnuts
1/2 lime

ingredients (vinaigrette):

2 tbsp. olive oil
1 tbsp. red wine vinegar
black pepper, freshly grounded
pinch poppy seeds

To make the pancake batter start by mixing in a mortar the fennel seeds, salt, pepper and olive oil and grind until is a consistent paste.
In a bowl add the chickpea flour, baking powder, 200 ml water and the fennel seeds paste and mix well. Allow it to rest for 15 minutes while preparing the vegetables.
Before making the pancakes, after the 15 minutes rest, add the 2 tablespoons of water and mix well once again.

In a non-stick frying pan over medium-low heat, pour some of the pancake batter (you can grease with a bit of olive oil if you prefer!) and spread well through the frying pan. Cook on one side for 4-6 minutes, as these pancakes take longer to cook and turn to the other side. Let it cook for another 4 minutes. Remove from heat and set aside while preparing the other pancake.

Serve  with sliced avocado, carrot,  wild rocket leaves, basil leaves, walnut halves and poppy seeds vinaigrette and 1/4 lime.

Enjoy!

Looking out for something new when a new year comes. Always looking for ways to brighten up a morning because breakfast should never be dull. A new recipe that I have yet to try. Under my radar for a few years. So as I was in my house in Portugal it felt right. I had the time to try something new. To try mixing spices and fruit that I wouldn't normally do first thing in the morning. Feels good and felt right. A cup of warm tea full of strong flavours. Not for breakfast but a complement. That feels good on a cold and grey morning. Not only good for the body also good to keep us warm. Was looking for something new, found it and gonna keep this ritual.

Chá de Curcuma
faz 1 frasco

Enjoy!

Turmeric Tea
makes 1 jar

This recipe is taken entirely from the blog 101 cookbooks by Heidi Swanson, that has amazing recipes and as natural as possible. Not only an inspiration source because of the recipes that creates but also for the simplicity in the beautiful pictures. This recipe is just another one in the pile of recipes that I wanted to try for a longtime. I followed the recipe as in the original but I added some ginger, because I love the flavour of ginger in tea.

ingredients:

80 ml  honey
2 1/2 teaspoons dried turmeric
lemon juice
ginger slices
freshly ground black pepper

Mix the turmeric into the honey in a mortar until it forms a paste. Keep in a jar and keep using it.

For each cup of tea, place a teaspoon of the turmeric paste in the bottom of a mug. Pour hot water (but not boiling as for a regular cup of tea) in the mug and stir well to dissolve. Add a squeeze of lemon juice, a ginger slice (or a few more) and a bit of black pepper.

Enjoy!
