june. it's hard to explain, it's a month of typical portuguese things. last month of spring. first of september. from all the seasons crossing, this is the prettiest one. from spring, to summer. the biggest days of the year. my birthday. and all the memories. memories of, last days of school. of popular festivities. the plans for the big st. john's night out. the first trips to the swimming pool. the first 'al fresco' nights. the first ice cream. the cluster of people on the street. of waiting half hour to eat 'bifanas'. or 'farturas'. the smell of grilled sardines. of promises to an unforgettable summer. or the smell of 'manjerico'. that every year at our home, everyone promised to take care of it to last until the next season. june, my favourite month.

pineapple and mint
serve 4

idea taken from the book 'da horta para a mesa' from the portuguese cookbook author Cláudiia S. Villax, which makes it with strawberries and mint and it's delicious.
to know how to slice a pineapple, watch this video.

ingredients:

1 medium pineapple (1,300 kg)
10 mint leaves, finely chopped
2 tsp. honey (optional)

Start by cutting it in half vertically, without taking the leafs off. Then slice the halves in half, which will leaves with 4 equal pieces of pineapple (for 'boats'). Then, cut the hard core of the pineapple (which is usually the hole of the pineapple slice) and then with a sharp knife cut the fruit by running the knife between the fruit and skin. Finally cut the pineapple into small triangles.
Place the pineapple 'boats' in a bowl, scatter the mint leaves on top and some honey (to cut some acidity).
Leave it to cool in the refrigerator for 1 hour or until you are ready to serve it.

Make focacca de physalis // physalis focaccia

early mornings. or late nights. i quite can't decide which one i do prefer. waking up early in the morning. a nice breakfast. some good coffee. read the newspaper. or explore some books. and magazines. a relaxed time. seated near the window. with that morning light. while it's still a bit chill. or staying up till late. when it's really quiet outside. and inside. all the candles. yellow lights. wrapped in a blanket. taking notes. when creativity shows up. thrilling ideas. caribou on the vinyl. a cup of tea. all the coziness. before heading to bed. and dream about next day's brunch.

focaccia de physalis e tomilho
faz 1 focaccia

ingredientes:

250 gr farinha branca forte
1 saqueta fermento (7gr)
150 ml água
1 c. chá sal
100 g physalis
1 c. sopa de azeite virgem extra
tomilho fresco

physalis and thyme focaccia
makes 1 focaccia

ingredients:

250 strong white flour
1x7 g active dried yeast
150 ml water
1 tsp. sea salt
100 g physalis
1 tbsp. extra virgin olive oil
fresh thyme
sea salt

At first pile the flour into a bowl and add the salt and the yeast. Then make a hole in the middle and add the water and gradually mix the ingredients with a fork until consistent to the point of being ready to do it with your hands. Now knead the dough for 5/10 minutes until elastic. After this process, place the dough in a bowl, cover well with a kitchen towel and let it rise in a warm, dry place for 1 hour.
When the dough is ready, grease a baking tray (25x30cm) with olive oil. Stretch the dough out in the baking tray and leave to rise for another 1/2 hour.
Then spread the physalis on top and gently pressed them into the dough, do the same for the thyme, drizzle some olive oil and spread some sea salt on top.
Bake in a preheated oven for 20/25 minutes at 220º Celsius degrees.

Serve as a main course with a winter chopped salad or as side dish.

my trip to brighton was oh so good! a small town. a seaside town. the brighton pier's lights and sounds. a pebble beach. narrow streets in the lanes, where only one person fits. flowers everywhere around town. coloured houses at north laine. bicycles that almost hit you. all the quirky cafés. and their terraces. so many nice restaurants. and so many other things. oh, and people's sympathy! if I could, I would be moving over there right now! in the meantime, I found a job. I quit, but they didn't let me. so I have a job, but I am not working and my mom is here on holidays!! ahh and it's my blog's second anniversary, happy birthday!!!

4 c. sopa azeite

100 gr manteiga

150 gr farinha

To make the crumble topping, work the cold butter into the flour by using your fingertips, until obtain a sandy, coarse crumb. Add the salt, cheese and nuts, but do not over-mix. The texture should stay very loose and sandy. Set aside until needed.
