Requeijão, Tomato and 'Poejos' Toast | https://oandrajos.blogspot.com

The simplicity of these Alentejo's lunches, when the scorching heat is around 40º C, where the gaspacho and toasts full of native flavours are the perfect combination. Its these flavours, these colours, whitewashed houses and so many other things that I appreciate the most when travelling in these land beyond Tagus river.
I like to try new combinations and this time, in the southern part of Alentejo was no exception. Days of pure entertainment and good food, a year after I embarked upon new adventure - return to Portugal - that henceforth leads to a new one.

Enjoy!

Requeijão, Tomato and Pennyroyal Toasts Recipe
para 2

The flavour of Alentejo's bread, with some farmer's market heirloom tomatoes and the fresh flavour of pennyroyal cultivated in Alentejo, give these toasts a different life. The trick here it to add some lemon juice to the requeijão, as I learned in a restaurant somewhere in Alentejo, that it boosts the flavour of requeijão and is the perfect contrast to the fresh and fragrant flavour of pennyroyal.
On the side, a 'gaspacho alentejano', because when the heat strikes it's the best solution

ingredients:

4 slices of Alentejo bread (big one will do!)
1 garlic clove
170 g requeijão (fresh cheese like ricotta)
1 tbsp. lemon juice
1 or 2 heirloom tomatoes, sliced
bunch of fresh pennyroyal leaves

Start by grilling the bread on both sides and then rub the garlic clove on the bread. Then mix the fresh cheese with lemon juice and spread it on the toasted bread slices. Then place the tomato slices on top and sprinkle some pennyroal leaves.

Enjoy!

Make sopa de chuchu // chayote soup

(talvez) perfeito!

the season of comfort food. to comfort. I must say that sounds better in english than in portuguese. the season of soups. of warm and simple soups. to do what it's expected, to comfort. because the days are smaller. the 'golden hour' it's not so late. but the sunset still has vibrant colours. going up to Bom Jesus to watch the sunset it's magical. one of my favourite programs. and arriving at home to eat a soup just like this. (maybe) perfect!

ingredientes:

3 chuchus (cerca de 1kg)
2 cebolas
1,2 dl água a ferver
1 e 1/2 chá sal marinho
2 c. sopa de azeite virgem extra
queijo creme
nozes

chayote soup
serves 4-6

Following the tips of a fellow portuguese blogger Vera Ferraz from the blog Hoje para jantar..., we should peel the chayotes under water, as they release a sticky substance that is hard to remove from the hands (I had to try myself to be sure, ahhhhh!). This tip makes it a lot easier..!

ingredients:

3 chayotes (about 1kg)
2 medium onions
1,2 dl water
1 & 1/2 sea salt
2 tbsp. extra virgin olive oil
cream cheese
walnuts
dried oregano
toasted rustic bread

First, prepare the chayotes, peeling and cutting into pieces (following the tips described above). Second, the onions, peel them and cut it in half.
On a large saucepan, place the chayote and the onion, add the boiling water and season with salt.
Bring to the boil and simmer for 25-30 minutes (until the vegetables are soft).
At the end add some the extra virgin olive oil and grind the soup with a hand blender until it is creamy and smooth.
Serve with some cream cheese, walnuts, dried oregano and some toasted bread on the side.

gaspacho alentejano

ingredientes:

4 tomates maduros (ainda firmes)
1/2 pimento vermelho
1/2 pimento verde
1/2 pepino
750ml água gelada
2 c. sopa azeite
2 c. sopa vinagre branco
pimenta preta moída na hora
2 dentes alho

gaspacho alentejano (or gazpacho alentejano, portuguese way)
serves 4 people

from the most beautiful place, the Alentejo, come the best cuisine and this 'gaspacho' soup is proof of this. a cold, simple soup and the best refreshment when the thermometers have already passed forty degrees centigrade.
this recipe was made and photographed while in Alentejo.

ingredients:

4 ripe tomatoes (but still firm)
1/2 red pepper
1/2 green pepper
1/2 cucumber
750 ml cold water
2 tbsp. olive oil
2 tbsp. white wine vinegar
freshly ground black pepper
2 garlic cloves
1 tsp. sea salt
1 tsp. dried oregano
sliced of 'pão alentejano' (or other rustic bread)

Start by slicing the vegetables - tomatoes, peppers (seedless) and cucumber - into small pieces (cubes, preferably). Then cover with cold water and season with olive oil, vinegar and black pepper.
In a mortar crush the garlic cloves and sea salt till makes a paste and add it to the vegetables mixture.
Place the mixture in the fridge for at least 1 hour, or until serving.
Just before serving add the dried oregano and serve with some 'pão alentejano' (alentejo bread), or in the soup, or on the side.
