Walnut Blueberry Cake Recipe

This cake, as well as a galette, which I also baked for my grandpa's birthday party, where the recipes that I made for this small gathering celebration.
A walnut cake, just how I like it. The mix of seasonal flavour with nuts.
Here it is the recipe, which was inspired in the book 'Love, Bake, Nourish' from Amber Rose, with only a few changes.

110 g butter, at room temperature
110 g sugar
2 eggs
110 g sifted flour
50 g walnut (grounded)
1 tsp. baking powder

Start by mixing on a bowl the butter with sugar and beat for at least 15 minutes until the mixture is creamy. Then add the eggs one at a time while continuing to beat. Now fold the previously sifted flour, grounded walnuts and the baking powder.
Pour the mixture over a round, simple, 20 cm cake tin.
Bake in a pre-heated over for 20 minutes (maximum 25 minutes), at 170º C, until golden on top and completely cooked.
Repeat the process for the second layer.
Allow it to cool completely before assembling the cake.

ingredients (for the blueberry compote):

Place the blueberries, water and sugar into a saucepan over a medium heat. Let the sugar dissolve and reduce the heat a bit. Simmer for 10 more minutes. Remove from heat, allow it to cool, pour into a air tight container and store it up to 1 week in the fridge.

ingredients (for the topping):

200 ml double cream
100 g cream cheese
100 g natural greek yoghurt

250 g blueberries

assembling the cake:

The cake layers must be around 2 cm tall. They don't need to be perfect, but relatively uniform.
Place the first cake layer on a cake stand, spread half of the cream, cheese and yoghurt mixture in an uniform and flat way and spread a few spoons of the blueberry compote on top (your choice) . Place the second cake layer on top and spread the rest of the mixture and on top add the blueberries.
Place in the fridge until serving time.

Enjoy!

The ice cream of my childhood. The ice cream that my mother made for all parties without exception. The ice cream that my family loves. The ice cream which the recipe passes from one to another, handwritten in any paper draft. The ice cream that delighted me the most. The one that for a long time was 'the' ice cream.  Which brings me memories of summer as a child, of family parties and small gatherings. This ice cream is synonymous of that, family, summer and birthday parties. we always had to have. and it seems good to me to bring back this tradition. to keep being my favourite 'ice cream'. even though it's not quite an ice cream.

ingredientes:

2 caixas chantilly royal (+ leite)
10 ovos (10 gemas, 10 claras)

600 ml double cream
6 tbsp. sugar
10 yolks
4 tbsp. water
10 tbsp. sugar

100 g flaked almonds (toasted)

In a bowl beat the 600 ml double cream with 6 tbsp. of sugar for a few minutes until it's consistent and fluffy. Then place it in the freezer for 20 minutes.
In the mean time prepare the soft eggs. In a saucepan add 10 tbsp. sugar and 4 of water, place it over medium/low heat  and let it boil for 2-3 minutes, just enough to boil but not to caramelize. Remove the pan from the heat and slowly start pouring the mixture into the egg yolks (which should be in a bowl, slightly beat and involved with a spoon), little at a time while stirring constantly to not 'chop'. After all involved pour it again to the saucepan and place again the saucepan over low heat for just a few more minutes. Keep stirring until you can see the bottom of the pan and remove from heat.
Then line a  24 cm round tray with baking paper and place a first layer of half of the cream, then a layer of soft eggs and cover with the remaining cream. Place it in the freezer for 24 hours.

Before serving sprinkle with toasted almond flakes.

Enjoy!

The text above reflects how much I love coffee. How important it to me. What attracts me the most. It's not only drinking coffee, is all the ritual around it. At anytime of the day. And I do like to invite people for coffee. Just like in that warm summer afternoon. An invitation made to my mom. To try a new combination. Coffee and coconut. Because she also loves coffee and she is the one to blame for my caffeine addiction.

The simplicity of these Alentejo's lunches, when the scorching heat is around 40º C, where the gaspacho and toasts full of native flavours are the perfect combination. Its these flavours, these colours, whitewashed houses and so many other things that I appreciate the most when travelling in these land beyond Tagus river.
I like to try new combinations and this time, in the southern part of Alentejo was no exception. Days of pure entertainment and good food, a year after I embarked upon new adventure - return to Portugal - that henceforth leads to a new one.

Requeijão, Tomato and 'Poejos' Toast | https://oandrajos.blogspot.com

Enjoy!

Requeijão, Tomato and Pennyroyal Toasts Recipe
para 2

The flavour of Alentejo's bread, with some farmer's market heirloom tomatoes and the fresh flavour of pennyroyal cultivated in Alentejo, give these toasts a different life. The trick here it to add some lemon juice to the requeijão, as I learned in a restaurant somewhere in Alentejo, that it boosts the flavour of requeijão and is the perfect contrast to the fresh and fragrant flavour of pennyroyal.
On the side, a 'gaspacho alentejano', because when the heat strikes it's the best solution

ingredients:

4 slices of Alentejo bread (big one will do!)
1 garlic clove
170 g requeijão (fresh cheese like ricotta)
1 tbsp. lemon juice
1 or 2 heirloom tomatoes, sliced
bunch of fresh pennyroyal leaves

Start by grilling the bread on both sides and then rub the garlic clove on the bread. Then mix the fresh cheese with lemon juice and spread it on the toasted bread slices. Then place the tomato slices on top and sprinkle some pennyroal leaves.

Enjoy!
