Make Before it Turns into Spring!

Some of us are already experiencing temperatures in the mid 80's and our time of making cooler weather comfort foods is short lived at best. It's time to make one of our favorite chilly night dinners before thoughts of outdoor barbecues, drinks with umbrellas and swimming pools become a reality~


Shepherd's Pie



Serves 4
Total time:  1 hour 45 minutes

Ingredients

1 lb of lamb mince
1 lb of carrots, sliced
9 oz of onion, diced
5 oz of celery
1/2 tbsp of thyme
1/2 cup of white wine
1/2 cup of lamb stock
1 tbsp of Worcestershire sauce
2 tbsp of ketchup
1 lb of potato (think skinned white or Yukon)
2 egg yolks
oil
salt
pepper
4 oz (one stick) of butter

Directions

Potatoes
Bring a pot of water to the boil and then drop in the potatoes (scrubbed with skin on, blemishes removed). Boil for 15 minutes or until the potatoes are tender. Drain and then add the butter. Mash the potatoes until all lumps are removed and set aside.

Place the lamb in a large pot or casserole dish with a little oil and cook until nicely browned. Drain to remove any excess fat and then return to the pot.

Place the pot over a medium heat and add the white wine. Heat until reduced by half then add the vegetables and cook until they are softened but retain their crunch.

Add the stock and reduce until the meat has absorbed all the liquid. Add more stock if the pie mix is a little dry. Season with salt, pepper and thyme and stir in the ketchup and Worcestershire sauce.

Transfer to an appropriately sized oven proof baking dish.

Mix in 2 egg yolks to the mashed potatoes, this will give the mash topping a glossy finish, then spoon into a piping bag. Pipe the mash on top of the pie filling until completely covered.  Use a ziplock bag with the corner cut out if you don't have a piping bag.

Place the pot or dish in an oven set to 400°F and bake for around 30 minutes, or until golden brown and bubbling. Serve immediately.

If you feel that after this time the top isn't golden enough, turn on the broiler set on high for a few minutes to achieve the color you desire.  Be very careful, the mashed potato topping will burn quickly at this point so keep a constant eye on it.
