Make Spicy and Delicious!

Time for a dish to wake up those taste buds!  Deliciously tender pieces of chicken teamed up with spices and herbs that really give a kick as well as an enticing fragrance! Lemon grass, fish sauce and Thai chillies all add to the simplistic complexity.  Cost effective and a time saver in the kitchen......would could be bad!

Vietnamese Lemongrass Chicken


Serves 2

Ingredients

Chicken
4 Chicken thighs, boneless, skin on (approximately 1 lb.)
1/2 Stalk of lemongrass (using only bottom white part)
4 Cloves garlic
2 Thai chili
1 Shallot
2 tbsp cooking oil

Sauce
2 tbsp Fish sauce
2 tbsp Sugar
1/4 tsp Black pepper

To Serve with
Cilantro leaves
Warm cooked Jasmine rice
Cucumber slices

Preparation

Cut chicken thighs into bite sizes and set aside.

Peel off the outer layers of the the lemon grass exposing the softer, more tender interior.  Thinly slice and then chop finely. This step is very important for a more  pleasant texture of the lemon grass. Set aside.

Roughly chop the garlic and chili, thinly slice the shallot and set aside.

In a small mixing bowl, add all of the sauce ingredients and whisk until sugar has dissolved. Set aside.

Heat a wok over high heat and add the oil. Swirl to coat. 

Add the chicken, skin side down and cook for 5 minutes without touching. This way the chicken skin will cook to be golden brown and crispy. Turn the chicken over and cook additional 1 to 2 minutes or until chicken is fully cooked.

Turn off the heat and remove the excess oil from wok by scooping it out with a spoon to another bowl. Leave only 2 tbsp of oil in the wok to keep cooking with.

Turn your burner back on to high,  add the lemongrass, garlic, chili and shallots into the wok. Stir fry for 1 to 2 minutes or until all the vegetables are softened and you can smell the beautiful aroma.

Add in the sauce you made earlier and stir fry until sauce has thickened and the chicken is evenly coated with the sauce, about 1 minute. Remove from the heat.

Plating/Presentation
Place a serving of warm Jasmine rice in the center of your guests plate and spoon over with the chicken and sauce. Sprinkle some chopped cilantro over top and place the thinly sliced cucumbers around the sides of the dish.
