It's easy to just throw them on the grill but you can also jazz them up with some simple flavors. Skewering them up makes them a nice and portable finger food! Mushrooms are many peoples favorite food and they just happen to be absolutely amazing when grilled! These balsamic garlic grilled mushroom skewers are so delicious and easy to make, pefect for summer grilling and get-togethers! Marinate the mushrooms in a simple but tasty balsamic garlic marinade, skewer them and then grill'em! The next time you are looking for a side dish or a tasty appetizers for a light main course for your outdoor grilling event, remember these balsamic garlic grilled mushroom skewers!
 

Balsamic Garlic Grilled Mushroom Skewers

 

Prep Time: 10 minutes Marinate Time: 30 minutes Cook Time: 10 minutes
 
 
Ingredients
Serves 4

2 pounds mushrooms, sliced 1/4 inch thick
2 tablespoons balsamic vinegar
1 tablespoon soy sauce (or tamari)
3 cloves garlic, chopped
1/2 teaspoon thyme, chopped
salt and pepper to taste



Directions

Marinate the mushrooms in the mixture of the remaining ingredients for 30 minutes.

Skewer the mushrooms and grill over medium-high heat until just tender and slightly charred, about 2-3 minutes per side.

Ingredients
 

4 large zucchini and summer squash
1 head cauliflower, cut into florets
8 skewers, soaked in water for 20 minutes
Extra-virgin olive oil, for drizzling
kosher salt
Freshly ground black pepper
1/4 c. crumbled feta
8 skewers, soaked in water for 20 minutes


Directions


Preheat grill to medium-high.


Shave zucchini and yellow squash into long strips using a Y peeler or mandolin.

Skewer zucchini, yellow squash, and cauliflower.

Drizzle with olive oil and season with salt and pepper.

Grill, turning occasionally, until vegetables are tender and slightly charred, 10 to 12 minutes.


Crumble Feta over top of skewered vegetables and serve!
