What a beautiful dish to have as part of your Sunday brunch....It's as delicious to look at as it is to eat! One of the wonderful things about this dish is that you can re-create the recipe as shown, or throw in a few items that you have in your refrigerator right now! Diced tomatoes, sliced peppers of red, green and yellow, onions, broccoli, spinach, a myriad of different cheeses, bacon, ham, chicken, pork, sausages (breakfast, mild and spicy)...you get the idea.  Another wonderful things about this recipe is that you can make it up a day or two ahead of time, it reheats beautifully, giving you time to work on the other dishes you are preparing for your brunch!
