Make When Does a Snack Become a Meal?

When it tastes this good it can!  There are tons of foods out there that many of us consider "snack" food, but to others, it may be a full blown meal.  I am here to say that there is no blurring of the lines....If you and your family love it and it can work as a main dish...Serve it as a main dish as with this recipe. Oh, did I forget to mention, this dish can be ready in 35 minutes.....talk about perfect after a long hectic day at work!

Chorizo, Spinach and Gruyère Quesadillas



Serves 2
Total time: 35 minutes


Ingredients


Quesdadillas
2 8-10 inch flour tortillas, plain
10 oz of chorizo
6 oz of Gruyère, Classic, grated
5 spring onions, roughly chopped
9 oz of spinach, washed and drained
1/2 tsp chilli flakes, optional
salt
pepper

Hot Sauce
1 tbsp of hot pepper sauce
1 tbsp of mayonnaise, or more for a less spicy finish
1 tsp yogurt, or sour cream

Directions

Hot Sauce
Whisk together all of the ingredients for the sauce in a bowl until smooth and combined. Place in the refrigerator while you make the quesadillas.


Chorizo Filling
Slice the chorizo into long strips and cook in a frying pan until  well cooked through.  Don't add any oil while cooking the chorizo as they will release plenty of fat. Cook in batches if you can't fit them all at once. Overloading the pan with the chorizo will cause them to steam more than brown, we want them to brown. Drain the chorizo on paper towels and set aside.

Drain off some of the oil from the pan, return it to the heat and add the spring onions. Sauté for a couple of minutes until just soft and add the spinach.

Cook, stirring continuously, until all of the spinach have wilted and the water has evaporated. Season with salt, pepper and chilli flakes and give it one final stir. You can make this a day or two ahead and refrigerate until ready to use.

To Assemble
Heat a tortilla in a pan.  Spoon the spicy sauce onto it, top with the spinach mix and arrange the grilled chorizo over the top. Sprinkle generously with the grated Gruyère cheese and drizzle more hot sauce of you like and top with a second tortilla.

On a medium heat, cook the quesadilla until the cheese has melted and the mixture has warmed through, around 3–4 minutes. Slice into wedges, grate more cheese on top while still warm and drizzle over more hot sauce.
