Make Fresh Florida Grouper....There is Nothing Better!
Simply prepared and simply delicious. I use Grouper for this recipe but you can use any firm, white firm fleshed fresh fish. I love grouper for this recipe as its mild flavor lends itself to the simple ingredients used.
Smokey Grouper with Spinach
Serves 2
Ingredients
1 lb Grouper
Smoked paprika
Italian seasoning
2 tbsp olive oil
4 tbsp butter
1 shallot, finely diced
1/2 cup white wine
1 bag of fresh spinach
salt & pepper, to taste
lemon juice
Preparation
Sprinkle some smoked paprika and a small amount of Italian seasoning on both sides of the Grouper and set aside.
Place butter and olive oil in a saute pan over medium heat.
When the pan is hot and bubbling, add the Grouper.
Saute for a few minutes on each side. 3 to 5 minutes depending on how thick your fillets are.
Remove fish from pan and set aside. Cover with foil to keep warm.
Add the shallot and white wine to pan and simmer for a few minutes.
Add the fresh spinach and saute over medium-high heat until the spinach has wilted slightly.
Season with a little salt and pepper.
Plating/Presentation
Place spinach on warmed plates and top with a grouper fillet. Spoon sauce over fish. Squeeze fresh lemon over the fish and serve immediately. A chilled crisp salad would be wonderful as a side dish along with a fluffy mildly flavored rice!
