Make Simplicity at its Best!
This is a summer favorite, but it translates into Fall with no problem! This dish is easy to make and very tasty, complementing steak, ribs, chicken, fish and more. By the way, these can be done either on the grill or inside under the broiler!
Grilled Garlic Parmesan Zucchini
Serves 6
Total time: 20 minutes
Ingredients
3 zucchini
3 tablespoons butter, softened
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
1/2 cup freshly grated Parmesan cheese
Preparation
Preheat an outdoor grill for medium-high heat, and lightly oil the grate or use a grill mat or tin foil.
Cut the zucchini in half lengthwise, and after grilling, cut them in half crosswise giving you 4 pieces from each zucchini.
Mix the butter, garlic, and parsley in a bowl, and spread the mixture on both sides of each zucchini slice. Sprinkle one side of each slice with Parmesan cheese, and place the slices, cheese sides up, crosswise on the preheated grill to keep them from falling through.
Grill the zucchini until the cheese has melted and the slices are cooked through and show grill marks, about 8 minutes.
Notes
Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.
