Make Your Taste Buds are Going to Love it!
Tangy, fruity and just slightly sweet.....oh wait, I forgot about pickle (y)! A quick and simple hors d' oeuvre that you and your guest will enjoy. The saltiness of the feta cheese (or your favorite goat cheese), sweet watermelon and a hit of something unexpected, pickled shallots. You can serve this as shown on an hors d' oeuvre spoon (won ton soup spoon), skewered, or as a salad with a few baby gem lettuce or spinach leaves tossed in.Goat Cheese, Watermelon and Pickled Shallot Hors d' Oeuvre

Ingredients
Watermelon Salad
1/4 watermelon
4 oz of feta or your favorite goat cheese
10 sprigs of baby basil
olive oil
Pickled Shallots
4 oz of red wine vinegar
4 oz of fine sugar
2 star anise
1/3 oz of pickling spice
2 banana shallots
Pickled Shallots
Place all the ingredients except the shallots in a pan. Bring to a boil making sure all the sugar is disolved and then chill down. Peel the shallots and slice them into thin onion ring style slices (keeping the slices whole). Cover the sliced shallots with the pickling solution and let macerate for 30 minutes.
Watermelon/Feta
Cut the watermelon into 1/2 in square cubes. Cut the feta into 1/2 in square cubes.
Plating/Presentation
Place cheese and watermelon cubes back to back on a spoon and top with a slice of pickled shallot, a sprig of baby basil and a small drop of extra virgin olive oil. If you are using small bamboo skewers, skewer a slice of the pickled shallot in between the watermelon and feta cubes also tucking a small sprig of basil in between the cubes. Drizzle lightly with olive oil.
You can order all kinds of hors d' oeuvre spoons online and quite reasonably...or, hit your local dollar store and purchase enough spoons for each guest times 2. When you get them home, simply grab a pair of pliers and a wash cloth (to prevent scratching the spoon) and bend the neck of the spoon to a shape that you like!
