Make Let's Grill Some Fish!

You don’t have to travel far for fresh island flavor. Thick pieces of Mahi Mahi (common dolphin-fish) are coated in a smoky rub and topped with a juicy tropical salsa. Kick back and enjoy this recipe with your favorite frozen drink.  The perfect fish and recipe to grill out with friends and family!  Mahi Mahi in this recipe can easily be substituted with Grouper, Snapper, Pompano or many other firm white fleshed fish.

Mahi Mahi with Mango Jalapeno Salsa


Serves 4
Total time:  23 minutes


Ingredients

Fish
4 mahi-mahi filets
2 tbsp extra virgin olive oil
1 tbsp cumin
1/2 tsp onion powder
1 tsp chili powder
1/4 t sea salt

Salsa
1/2 cup mango, diced
1/3 cup Roma tomato, diced
1/4 cup red onion, finely chopped
1/4 cup cucumber, peeled, seeded and diced
2 tbsp cilantro, finely chopped
1 tbsp lime juice
1 tsp jalapeño, minced
Sea salt, to taste


Preparations

Salsa
Combine ingredients for salsa in a small bowl. Stir. Refrigerate until serving.

Mahi Mahi
Set mahi-mahi filets on a plate and drizzle with olive oil. Mix together cumin, chili powder, onion powder and sea salt. Rub seasonings over each filet.

Preheat grill to medium heat.  Place mahi-mahi on grill. Cook 3-4 minutes, then gently turn over and cook 3-4 minutes longer.

Plating/Presentation.  Plate the mahi-mahi with a spoonful or two of the salsa on top. Serve with lime and cilantro rice or pigeon peas and rice , Delicious!

*Using a grilling mat will help the fish from sticking to the grill while still allowing for those beautiful grill marks.
