Seared Yellow Fin Tuna with Citrus Salad
Serves 2
Total time: 20 minutes
Ingredients
Tuna
12 oz of Ahi Tuna (Yellow fin), exceptional quality
Marinade
2 tbsp Tom Yun paste
2 tbsp quality mayonnaise
wasabi paste, to taste and heat level preferred
sesame seeds, both white and black mixed together in a bowl
1 tsp of sesame oil
Salad
8 oz of baby leaf spinach, rinsed and dried
Dressing
1/2 lime juice, freshly squeezed
olive oil
sea salt
Preparation
Marinade
Mix all of the ingredients together in a bowl or shallow plate large enough to accommodate the tuna creating a smooth creamy sauce. Adjust flavors based on your tastes.
Ahi Tuna (Yellow Fin)
Marinate the tuna in the marinade sauce for 2 to 3 minutes turning to coat all of the fish.
Preheat a heavy bottomed pan, like a cast iron skillet, to medium high heat. Give the pan a few minutes to heat up evenly.
Coat the marinated tuna in the mixed sesame seeds making sure you get an even coating all over. Gently shake off excess.
Pan sear the tuna for 1 minute on the first side and 30 to 40 seconds on the remaining sides. Remove from the pan and set aside on a cutting board.
Salad and Dressing
Place the baby spinach leaves in a large bowl. Squeeze half of a fresh lime right over the spinach. Add enough olive oil to coat the leave and finally a sprinkling of sea salt. Toss to incorporate.
Plating/Presentation
Place a large spoonful of the marinade/sauce on the plate. Slice the tuna 1/4 inch thick and lay 3 to 4 pieces on top of the sauce in a fanned out presentation. Place the dressed salad to one side and serve! A crisp, chilled Pinot Grigio would be delicious with this dish. Enjoy!
