Make Soft Boiled Eggs and Pizza??
A soft boiled egg adds another layer of texture and flavor to this sublime pizza recipe. Add to that, baby spinach leaves, fresh mozzarella, shaved Parmesan and an out of this world tomato sauce recipe worth saving in your cookbook file for use in many Italian dishes aside from pizza.
Eggstraordinary Pizza Fiorentina
Serves 2
Total time: 45 minutes
Ingredients
Fiorentina (with spinach)
1 pizza base (store bought already shaped shell or pizza dough)
5 olives, mixed
3 oz of buffalo mozzarella
1 handful of baby spinach
1oz of Parmesan, grated
1 pinch of oregano
1 egg, soft boiled, peeled and quartered lengthwise
olive oil
salt
Tomato Sauce
2 tbsp of olive oil
1 medium onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
2 tbsp of parsley, chopped
1 garlic clove, minced
4 tbsp of balsamic vinegar
2 14 oz cans of chopped tomatoes
1 tsp tomato purée
1/2 tsp dried oregano
2 tbsp of basil, finely chopped
salt
black pepper, freshly ground
Tomato Sauce
Place a heavy bottomed pan over medium heat. Add the olive oil and once hot, add the onion, celery, carrot and parsley. Cook slowly, stirring occasionally for 15 minutes, until the vegetables are very soft.
Next, add the garlic, turn up heat up and cook for a few minutes, while stirring. Add the balsamic vinegar and reduce by half. Then add the tomatoes, tomato purée and oregano
Season well with salt and pepper, reduce the heat and simmer for 15 to 20 minutes, uncovered, until the sauce thickens and concentrates in flavor. Finish with the basil, check the seasoning and adjust accordingly. Remove from the heat and allow to cool before using.
Preheat the oven to between 450°F. and 500°F.
Pizza Base
If using fresh pre made pizza dough, roll the dough out on a lightly floured surface, turning the dough around every few rolls of of the rolling pin shaping it into a circle as you go. For a typical crust roll it out to no less than 1/4 inch. For a thin crust pizza roll it out to an 1/8 inch.
If using a pre-made and shaped pizza shell, add a thin layer of the tomato sauce leaving a 1 1/4 inch to 2 inch gap around the edge. Arrange the olives and mozzarella evenly around the pizza.
Bake for 5-7 minutes until the crust is crisp and lightly colored.
Remove the pizza from the oven and finish with the baby spinach, oregano, Parmesan shavings, egg, a pinch of salt and a drizzle of olive oil.
Plating/Presentation
I would bring the entire pizza to the table so your guests can see how beautiful it is. Using a sharp wheeled pizza cutter, cut a appropriate sized slice of pizza and plate it for your guest. You may want to have extra grated cheeses, olives, tomato sauce, salt, pepper and garlic for your guests to personalize their slice.
