Make Two Summer Favorites!
Fresh and tasty balsamic marinated grilled chicken topped with melting fresh mozzarella, ripe tomato and plenty of basil! Here's a new take on the classic summer caprese salad served as a meal on grilled chicken! This quick and easy grilled chicken dinner has all of the flavors of a caprese salad and deliciousness of grilled chicken. The chicken is marinated in a balsamic vinaigrette which adds a loads of flavor before being grilled which adds an amazing smokiness.
Caprese Balsamic Grilled Chicken
Serves 4
Total time: 20 minutes plus 8 hours marinate time
Ingredients
4 (6 ounce) boneless skinless chicken breasts
1/2 cup balsamic vinaigrette
8 ounce fresh mozzarella ball, sliced
1 ripe beefy tomato, sliced
1/4 cup basil, chiffonaded
1/4 cup balsamic reduction*
Preparation
Marinate the chicken in the balsamic vinaigrette overnight.
Grill the chicken starting with the meaty side down first on a medium-high heat until cooked and slightly charred, about 6 to 7 minutes. Flip the breasts over and grill for another 6 to 7 minutes before topping with the mozzarella and tomato and letting it heat until it just starts to melt. Grilling time will depend on your grills temperature and thickness of the chicken breasts. Internal temperature should be between 160 and 165 degrees. Be careful not to overcook. Breast tend to dry out quickly and will continue to cook for a few minutes after being removed from the grill.
Plating/Presentation
Serve topped with the basil and balsamic reduction.
Note: It's best to marinate the chicken overnight but you can do it for less time.
*To make a balsamic reduction, simmer 1/2 cup balsamic vinegar over medium heat until it has reduced by 1/2.
