Make Why Not Cook Everything on the Grill!
With everyone outside grilling away, what a perfect time to realize that you can cook almost anything on the grill. With just three ingredients, this simple recipe would make a beautiful and unusual addition to a outdoor dinner party, lunch or barbecue. Chargrilling adds color and a smoky flavor, while the fragrant blood orange and olive oil dressing adds both sweetness and depth to counter the slight bitterness of the radicchio.
Chargrilled Radicchio and Blood Orange Dressing
Serves 4
Total time: 10 minutes
Ingredients
Radicchio
2 heads, washed well
For the Dressing
6 blood oranges, juiced
7 oz of extra virgin olive oil
Preparation
Dressing
Gently heat the blood orange juice in a small pan and reduce it to a syrupy consistency. Whisk in the olive oil until emulsified, then set aside to cool. If you feel you would like your dressing a little sweeter you can most certainly add a local honey to taste.
Radicchio
Halve the radicchio heads and chargrill until colored, then dress the radicchio with the blood orange dressing and serve.
Plating/Presentation
Family style! Place all the grilled radicchio on a large platter and drizzle with the dressing. Have some extra dressing on the table for your guests who would like more!
